Wahaca's Soft Baked Feta

If this baby comes out looking like hunk of emmental, a slice of applewood cheddar or a crumble of feta I would not be at all suprised. Cheese. I cannot get enough of it. On crackers, with apple slices, melted on toast.... yes please.... this is my latest fancy. It is taken from Wahaca Mexican Food at Home. If you have not been to Wahaca in London yet - do - it is lovely and fairly easy on the bank balance - lots of spice, tang and salsa and a favourite to meet my girlfriends in as it's platter sharing which I love. In the meantime try this at home - spicey, salty and zesty - just scoop it up with a crusty loaf.....
Preheat the oven to 180°C/350°F/gas 4.

Drain and slice the feta and lay it out in an earthenware bowl wide enough to hold the 
slices in a single layer.

Finely chop the garlic and the herbs, and roughly chop the chillies. Sprinkle them over the 
feta with the lime juice and zest. Finally, pour over the extra virgin olive oil.


Bake for 10–15 minutes, until the cheese is soft and squidgy and smelling irresistible.

Snapshots

I know, the blog has been a barren land of late. I would apologise but it cannot be helped.... with the Christmas madness and our house reaching it's final stages (she said, ever hopeful) I have been otherwise engaged mostly doing terribly glamorous things like buying bath waste pipes or copper pipe cleaner. Still, here are some random snapshots of the past few weeks: a lovely yuletide on the shores of West Wittering, lots of trips to various parks to make the most of the lovely sunny weather and escape our rather cramped rental cottage (which is like living in a storage unit full of lighting, kitchen equipment, paint etc etc etc), my ever increasing belly and rather a lot of Spiderman paraphernalia...

Snapshots

As I havent done a snapshots for a while this is a very random and long stretching collection of pics! The end of autumn, an ever growing preggo bump, the sun in Topsham, hanging in our tiny temporary home, out n' abooot the local fields and lastly our annual festive trip to Longleat. I have said it before, and I will say it again..... Longleat is AMAZING. Every year my eyes water when I pay for the tickets and I wonder if it is worth it - well, as always any doubts disappeared as soon as we drove through the gates! The animals had both my boys enthralled, they went on a train to see Father Christmas in his Winter Wonderland and this year they had a Festival of Light. It was the most magical, beautiful, spectacular installation of lights you have ever seen - it was like actually wondering through a fairyland dream...... I want to go again..... and again..... and again......
My colour consultant - the people of B+Q now know Mo chops by name!
